Pumpkin Granola

Pumpkin Granola

Ingredients

  • ½ cup pumpkin or butternut squash puree 
  • ¼ cup oil (rapeseed, olive, or coconut oil works great) 
  • ¼ cup maple syrup 
  • 1 tbsp tahini 
  • ½ tsp ground ginger 
  • 1 tsp cinnamon 
  • 2 cups gluten-free rolled oats 
  • ½ cup crushed walnuts 
  • ¼ cup mixed seeds (you can use seeds from the pumpkin or squash!) 
  • Salt 

Preparation

  1. Cut the pumpkin or squash lengthways and set your Cuisinart Mini Oven to the roast setting. Roast at 190°C for 30-40 minutes, until soft. Scoop out the inside and mash into a puree. 
  2. In a bowl, mix the pumpkin/squash puree, oil, maple syrup, spices, and 1 tsp of tahini. Add the oats, walnuts, and seeds, mixing well to ensure everything is coated. 
  3. Spread the granola evenly onto a baking sheet. Sprinkle with salt, then set your Cuisinart Mini Oven to the air fryer setting and air fry at 190°C for 20 minutes, stirring halfway through.
